Seared Salmon with Mango Reduction

Piece of Salmon
Basil Leaves (A Bunch)
Spinach
3 Mangos
Salt
Pepper
Olive Oil
Honey
Directions:
1. Place 3 Mangos in Oven for 45 minutes at 350 degrees
2. Puree your basil leaves and add salt, pepper and olive oil
3. Sautee Spinach in pan
4. Plate your spinach once it’s sauteed along with your Basil Puree
5. Take Mangos out of oven, peel skin and scrape of pit into processor. Blend mango with 1/4 cup of Honey.
6. Season Salmon on both sides and place in cooking pan until it’s seared to your liking. Once it’s done, place on plate along with mango puree.
7. Serve and enjoy!
