Guacamole & Carrot Chips

Ingredients:

Carrot
2 Avocado
1 Onion
Cilantro
Salt
Pepper
Jalapeno

Directions:

1. Cut up the Jalapeno (Remove seeds if you don’t want it too hot)

2. Scoop Avocado out into bowl along with chopped Jalapeno, diced Onion, and chopped Cilantro

3. Sprinkle some salt and Pepper> Mix everything up to a Guacamole/Paste type substance.

4. Cut Carrot into slices and use as a substitute for chips.

5. Dip Carrot into Guacamole and Enjoy!

  2. Hi Erin, Do you do anything with the Cucumber, bake it or anything like that? Or do you cut and serve the way we did with the Carrots?
